Tasty Tomato Soup

Quick, easy and super tasty. Ideal if you want to impress and whip up something home-made with fresh ingredients.

Preparation time: 20 mins. (+ 30-50 mins. cooking time)

Serving: 2 portions

Ingredients:

  • 500g cherry tomatoes
  • 1 red onion
  • 2 garlic cloves
  • 700ml vegetable broth
  • bay leave
  • salt and pepper
  • olive oil and balsamic vinegar

How to:

  1. Pre heat oven to 180°C upper- and lower-heat or 200°C fan oven
  2. Cut tomatoes in half, chop onion and garlic cloves
  3. Spread evenly on baking sheet, season and pour a bit of olive oil and balsamic vinegar over it (don’t soak it)
  4. Place baking sheet in oven for 35 mins or until golden brown
  5. Set vegetable broth on medium heat, add bay leave
  6. Add roasted vegetables to broth and cook for 20 minutes
  7. Remove bay leave and blend soup
  8. Enjoy!
