Magical Macarons

One of my very favorite desert, energy booster and delight – macarons. Whether you prefer them sweet, chocolatey or nutty, they are always pure joy for my tastebuds. For the first time ever I gave it a try and they turned out quite magical.

Preparation time: 1 hr (exkluding letting macarons dry on pan)

Servings: 17-22 pieces

Ingredients:

  • 80g almond – finely crushed
  • 100g confectioners’ sugar
  • 70g egg white (2-3 eggs) > separated and refrigerated over night
  • 40g fine-grained sugar
  • pinch of salt
  • food coloring
  • 3-4 large spoons of marmalade
  • icing bag

 

How to – macarons:

  1. separate eggs (2-3) and set egg white in fridge over night to let dry a bit
  2. sift crushed almonst so only very fine and dusty part remains, sift confectioner’s sugar on top and mix – set aside
  3. whip egg white and fine-grained sugar until stiff
  4. add food coloring depending on flavor of macarons
  5. gently fold in dry-mix bit by bit until smooth and gooey mass
  6. fill icing bag and cut tiny hole to release batter
  7. place dots (1.5-2cm) on baking sheet with baking paper
  8. lift baking sheet and beat with flat hand from underneath to get rid of extra air in macarons
  9. set aside for 1hr to let excess moisture dry
  10. bake for 12-14mins at 130°C
  11. let cool

 

How to – filling & assembly:

  1. heat up marmalade to remove some moisture
  2. remove macarons with a knife
  3. fill evenly with a spoon
  4. stick together with matching top
  5. enjoy!

It takes quite some time to sift the almonds, but it is absolutely worth it!
